Nasturtiums Make Simple Salad Special
I discovered early on that leafy greens just made me feel and think better, therefore this salad featuring colorful nasturtiums is so appealing!
As a person with RA (rheumatoid arthritis), I’m always on the lookout for quick, easy and nutrition packed recipes. If the presentation has a WOW factor, all the better! I’ve decided simplicity and preparedness in the kitchen wins the day with RA. I can spend my energy doing necessary tasks and things that bring me joy. This simple salad starts with organic greens and ends topped off with nasturtium blossoms right out of my herb garden to add a pop of color, a peppery taste and a punch of vitamin C. Nasturtiums are easy to grow, tasty and make my salad oh, so wonderful. Give it a try!
I shared this recipe in a previous blog post with rave reviews! I hope you enjoy the combo of organic greens, blueberries, strawberries, pistachios, dried cranberries topped with nasturtium blossoms that make this salad simple and visually appealing. Dress it with a white balsamic vinaigrette and you are ready for a quick, healthy lunch! This fits the F for Food element of my FRESH life story. As always, using Arthritis Wisdom! Enjoy!**Cathy**XOXO
